Ingredients
- 2 tablespoons black olive, chopped.

- red onion slivered.
- 2 tablespoons freshly squeezed lemon juice.
- feta cheese, crumbled.
- 2 teaspoons. fresh oregano.
- 2/3 cup. red bell pepper, diced.
- 1 Freshly ground pepper to taste.
- 1.4 ounce well rinsed, fresh black-eyed peas.
- 4 cups fresh cucumber, diced and peeled.
Cooking Directions
- In a large bowl, whisk the oregano, pepper, lemon juice and oil until they are thoroughly combined.
- Add the black-eyed peas, feta, onions, cucumber, olives and the bell pepper then toss well to coat. Serve and Enjoy.
